Once again, I didn’t eat the bananas I bought, in their healthy form. I hate throwing food away, so why not make cake? This banana cake turned out great! Super soft, and the chocolate chips and cream cheese frosting bring it to a new level. I love no fuss cooking, and this cake falls into that category.
What you need.
1 1/2 cups of mashed bananas
3 cups of flour ( I used wheat flour)
1 1/2 tsp baking soda
3/4 butter softened
2 cups and 1 tbs sugar
3 large eggs
2 tsp vanilla
1 1/2 cup whole milk
1/2 cup soft butter
1 (8oz) cream cheese
3 1/2 powdered sugar
Preheat oven to 300 degrees. Cook 30 min. Toothpick test until comes out clean. Butter or grease 9×13 pan.
Ok, so first you want to mash the bananas. Add vanilla,sugar, butter and eggs. Mix together with hand mixer until combined.
In separate bowl combine flour, baking soda and salt. Wish or stir together.
Add milk to banana mixture bowl, and gradually add in flour mixture. Mix until everything is combined and you have a smooth batter.
Add chocolate chips, fold in with spoon.
Let cake cool completely before frosting.
Mix butter and cream cheese, gradually add powder sugar ( if not it will go everywhere)
The weather is getting cold here in Bend. Living in a fifth wheel, there will always be an uncertainty wintering in a trailer. Luckily, we upgraded our trailer from last year and now have heated water tanks. If you’ve lived in a trailer in the winter, you understand the greatness of heated tanks.
This Fall has been a long one. Mid November and finally seeing freezing temperatures. It’s bitter sweet for me. I love to ride my motorcycle in the summer, but I am not a sun and sand kind of girl. I love the way the cold air feels on my face, and drinking hot coffee is the best. Before the snow hits hard my dog Max and I have been doing some exploring.
Devils lake was beautiful. Only a 30 minute drive from the house, and well worth it. The water was a see-through turquoise and you could see the bottom all the way around the lake. Max loved it. He has become more and more confident the more we explore. He loves being off his leash. Somedays he is better at ” Max Come” than other days, but we are still working on it.

This is Max, our ” only child.” Yes, I know he is a dog, but he is spoiled like an only child. We don’t have kids, so instead of living at the park, we live at the dog park. Max is a Bulldog -Pug Mix, and he is so sassy. I love his personality. He is always down for a good time. Sometimes he likes to fetch, but really, keep-away is his game. Living in a small space, we have to be picky about kitchen gadgets. These four kitchen appliances are gold in my tiny kitchen. I like to have appliances that do more and cook more than one thing. All these past the test!
- Instant Pot This is my newest appliance so I am still learning recipes. So far it’s a pretty magical little pot. Cooked Spaghetti Squash in 15 minutes!
- Grill Press or Panini Press they call it. I have cooked everything on this guy. Chicken is my Favorite. I am the worst at drying our chicken when I bake it, this press fixes that problem!
- Kitchen Aid Hand Mixer I love my hand mixer. I wish I had more counter space for a stand mixer, but I don’t. If you have a small kitchen or you don’t want to spend the money on a stand mixer, this had mixer does a great job.
- Ninja Coffee Bar Worth every penny. You can make half pot, whole pot or single cups. I have been really impressed with this coffee brewer.
